Bolo de Azeite e Ovos (Olive Oil and Eggs Cake) is actually more like soft (SO soft!) bread, and something that has been in my life since I was born.
It’s a traditional Easter gift in the area of the country where my parents were born but, thankfully, it’s available year round. Not easy to find elsewhere though. I tried variations of this one, but not a single one came close.
I had tons of this when we went up north for the holidays, and have fond memories of eating it with cheese, butter, or honey.
Dad just brought me on from the north, and I’ll be a happy maique until we finish it! tinyMovieStar tried the yellow bread and couldn’t get enough of it. Yummy!
